We recently ate harira at a Moroccan restaurant and I enjoyed it so much I asked my Morrocan born father about it. He has vivid memories of eating harira as a child in Morocco. His mother would get up early in the morning to prepare a large pot all 8 children would eat in the mornings. It made me want to try and make the soup myself. His mother used all fresh ingredients, but we can take some short cuts with canned chick peas.

Ingredients

1 can chickpeas - (16 oz) drained, rinsed
3/4 cup dried lentils rinsed, sorted
2 large onions chopped
3 large celery stalks diced
2 cup diced ripe tomatoes
2 garlic cloves minced
1 tsp turmeric
1 tsp cumin
1/2 tsp grated fresh ginger (or 1/4 tsp dried ginger)
1/2 tsp cinnamon
2 tbl olive oil
Juice of 1/2 lemon (slice the remainder thinly for garnish)
1/2 cup chopped fresh cilantro
6 cups water
Salt to taste

Directions

  1. Heat the oil in a soup pot and sauté the onions over medium heat until translucent.
  2. Add the celery and garlic and sauté until the onions are golden, another 5 minutes.
  3. Add water, lentils, and spices and bring to a simmer, then cover and continue simmering over low heat for 35 minutes (the lentils should be tender).
  4. Add tomatoes and chickpeas and simmer for another 10 minutes over very low heat.
  5. Stir in the lemon juice and cilantro and season with salt.
  6. Serve garnished with one or two thin lemon slices.

Made the vegetarian Harira for my poker group. Big hit! Love the spice combination. Used dried garbanzo beans and canned lentils, the last of the garden tomatoes, now very ripe, and lots of cilantro. Thinking of how spicy lamb would taste. Thank you for this wonderful recipe!

I used this recipe to make harira for the first time and it was amazing! I did substitute 2 cups of water for two cups of vege broth, I was afraid that it would be too watered down otherwise. Thanks for sharing!

Both my sister and I love this tasty soup. I'm a novice cook, but found the recipe pretty easy to follow, and it gives great results every time. It's very easy to spice up, too, if you want.
