This has been a favorite dish in our family for my years. My grandparents brought this from Egypt to the US, and my mother made it often. The preparation is simple and you can find this dish in many middle eastern restaurants today. We used ground beef, though lamb is also used. Kofta is often made using different shapes -- some are round patties, others made on a skewer. We always made them elongated and about 3 inches long. This recipe makes a small batch, but you can easily double it for more. Serve these with hummus and rice.

Ingredients

1 lb. ground beef (not too lean)
1 small onion, chopped very fine
2 cloves garlic, minced
1/4 cup parsley (I used dried, but fresh is better)
1 tsp. cumin
1 tsp. paprika (for color)
Salt and pepper to taste

Directions

  1. Mix all the ingredients together. At first it will appear that there is too much onion but keep mixing until it is evenly distributed.
  2. Take a small amount of mixture (about the size of a large walnut) and shape into a 3 inch long roll
  3. Broil kofta for 10 minutes, turning once. They should turn a nice brown color.
