Boureketas with Spinach Filling

These savory bourekas are filled with spinach cheese and make a wonderful snack or appetizer.

Ingredients

For the dough:
1-1/2 cup vegetable oil
1-1/2 cup water
1 tsp salt
5 cups flour

Spinach Filling:
1 package frozen chopped spinach, thawed
1 egg
16 oz. cottage cheese
Salt and pepper, to taste

Directions

  1. Prepare the filling by squeezing out all water from thawed spinach then mix with remaining filling ingredients. Set aside.
  2. Combine dough ingredients in large mixing bowl.
  3. Knead on floured surface.
  4. Take 1/3 of dough and roll to 1/8 inch thickness.
  5. Cut into 2-1/2 inch circles and place a tablespoon (or so) filling in center.
  6. Fold the dough over press the edges together, sealing with water. Crimp with fork.
  7. Repeat with remaining dough.
  8. Bake at 400 F, for 40 minutes, until golden brown.
