I have created a recipe that tastes sweet and delicious like it is supposed to, but it is much more healthy and suitable for diabetics. I have greatly reduced the cholesterol and fat, as well as replaced the sugar with a healthy substitute. Instead of regular sour cream and cottage cheese, I used Tofutti milk free sour cream and organic 1 % low fat cottage cheese. Ingredients

1 (6-ounce) package cholesterol-free wide noodles, cooked
1/4 cup margarine, softened
1 1/2 cups organic 1% reduced-fat cottage cheese (the brand I used is called Nancy's)
1 cup Toffuti milk free sour cream
5 1/2 teaspoons Stevia sugar substitute
3 large eggs
1/2 cup dark raisins
2 cups of diced apples
1 and a half cup of pecan halves
1/2 teaspoon ground cinnamon

Directions

  1. Measure out all ingredients and put into mixing bowl.
  2. Boil noodles and add to mixing bowl of ingredients.
  3. Mix thoroughly all ingredients together.
  4. Pour ingredients into 9 by 13 inch pyrex pan and preheat oven to 350 degrees.
  5. Bake until noodles brown on top, typically takes around 45 minutes depending on oven.
