Moroccan Salad Dressing

My Moroccan father makes a simpler version of this dressing, which he uses in every salad he makes. I use this version when a want a less lemony flavor, or to dress up a plain salad plain salad of tomatoes, cucumbers and green onions.

Ingredients

2 tbl. lemon juice
6 tbl. olive oil
3 garlic cloves, minced
1/2 tsp. Hungarian paprika
1/8 tsp. cayenne
Salt and black pepper, to taste
4 tbl. fresh flat-leaf parsley, chopped
4 tbl. fresh cilantro, chopped

Directions

  1. Combine ingredients together and whisk vigorously with a fork.
  2. Let stand for 30 minutes. Stir before using.
