My aunt makes a nice potato salad that never met a jar of mayonnaise. Same with this recipe and the oil and lemon juice give it a light flavor that's healthy as well.

Ingredients

8 medium potatoes
salted water
1 medium onion, chopped fine
1/2 cup parsley, chopped fine
1/2 tsp. dried mint
salt
freshly ground black pepper

For the dressing:
1 clove garlic
1 tsp. salt
1/2 cup lemon juice
1/2 cup olive oil
freshly ground black pepper

Directions

  1. Wash potatoes and boil (skin on) in lightly salted water.
  2. Let cool then peel and cut into 3/4 inch cubes.
  3. Mix potatoes in bowl with onion, parsley, salt and pepper.
  4. Crush mint to a powder and add to potatoes.
  5. Mix salad dressing ingredients then pour over potatoes and toss to coat evenly.
