Artichokes with Lemon Dressing

Both my wife and I have fond memories of eating artichokes at meal time and now our children enjoy them as well. Serve with a light vinaigrette for dipping the ends of the leaves

Ingredients

4 artichokes, medium
2 tbl. lemon juice
5 tbl. olive oil
1 tsp. thyme, dried
1 tbl. fresh Italian parsley
Salt and pepper to taste

Directions

  1. Trim the tops of the artichokes, about 1/2 to 1 inch
  2. Trim the leaves to remove sharp edges
  3. Add artichokes to large pot of boiling water, salted. Leave boiling for 30 minutes. Make sure the artichokes are submersed in the water (I used a pot cover to weigh them down).
  4. Prepare the dressing by mixing lemon juice, olive oil, salt, pepper, thyme and parsley.
  5. Remove the artichokes from the water and place face down (top down, where you cut) to drain.
  6. Serve with lemon dressing and enjoy!
