Ingredients

4 squares matzoh
7 large eggs, separated
1 1/2 cups sugar
Juice of half lemon
1/2 teaspoon lemon zest
1/3 cup margarine
1 1/2 teaspoons cinnamon
4 large Granny Smith apples, peeled and grated
1/2 cup seedless raisins
1/2 teaspoon salt, adjust to taste

Directions

  1. Cover matzoh in water until soaked, then drain and press out excess water.
  2. Beat egg yolks with sugar until light and fluffy. Add matzoh, lemon juice, margarine, cinnamon and 1/4 teaspoon salt and continue beating until combined.
  3. Add grated apples and raisins to yolk mixture. Beat egg whites and 1/4 tsp. salt, until frothy, at low speed. Increase speed to high and continue beating until soft peaks appear. Fold egg whites into the yolk mixture.
  4. Pour mixture into a 9 x 13 inch baking dish (greased). Bake at 375 degrees (F) until lightly browned on top.
