Add coarsely chopped fruit to liven up this cool summer wine float.

2 cups kosher red wine
3/4 cup water
1 stick cinnamon
1/2 cup sugar
3 tbs potato starch
juice of 1 lemon
3 egg whites


  1. Mix the wine, water and cinnamon stick and bring to a boil In a medium sized saucepan
  2. Mix the sugar, potato starch and lemon juice until the starch is dissolved.
  3. Stir potato starch mixture into the wine and continue to cook over low heat, stirring constantly until thick and clear.
  4. Discard the cinnamon stick and remove the pan from the heat. Let cool.
  5. In a small clean mixing bowl beat the egg whites until stiff. Set aside 4 dollops.
  6. Fold the stiffly beaten egg whites into a third of the warm,
  7. wine mixture.
  8. Divide the remaining wine mixture into 4 individual glasses.
  9. Top each glass with a dollop of fluffy egg whites.
  10. Serve chilled.
