Taboulleh did not originate with Jews but it is popular among Mizrahi Jews and has spread in popularity to many Israeli and American Jews.

Mizrahi Parve Salad

Ingredients

2 cups Bulgur wheat
2 cups boiling water
2 bunches scallions, diced
2 bunch parsley, chopped
10 roma tomatoes, diced
1/2 cup mint, chopped
1/3 cup olive oil
1/3 cup lemon juice
1/2 tsp. salt
1/8 tsp. pepper

Directions

  1. Mix olive oil, lemon juice, salt and pepper to make dressing.
  2. Bring water to a boil in a double boiler and add bulgur to top with 2 cups boiling water. Cook for 15 minutes.
  3. In a large bowl, add dressing to bulgur, stirring frequently to cool.
  4. Add parsley, scallions, tomatoes and mint
