If you don’t like pineapple, substitute sweet potatoes and increase the sugar (to keep it sweet).

Ingredients

2 lbs. carrots
1/2 cup pineapple, crushed
3/4 cup water sugar syrup

Directions

  1. Peel and slice carrots.
  2. Cook in slightly salted water for about 20 minutes, or until almost done.
  3. Add pineapple to carrots and continue cooking for an additional 15 minutes until soft.
  4. Add sugar syrup to taste and serve.
