Apple Nut Rum Cake

Ingredients

2 lb. finely sliced apples
1.5 cups wheat flour
1-1/4 cups milk, lukewarm
1 cup + 2 tbl. sugar
4 eggs
1 cup hazelnuts, ground
1 cup almonds, skinless and finely sliced
1 cup raisins, golden or black
A few drops of vanilla extract
1 tbl cinnamon
1 pinch nutmeg
1 pinch ginger
2 tsp. rum
Juice of two lemons
Pinch of salt
Butter flakes

Directions

  1. Mix the sliced apples, raisins and lemon juice in a bowl and set aside (the lemon juice should keeps the apples from turning brown)
  2. In a seperate bowl mix the flour and milk, eggs (add one at a time), 1 cup sugar, vanilla, rum, spices, salt and ground hazelnuts. Mix well.
  3. Drain apples and raisins and add them to the flour mixture. Mix well and pour into baking dish.
  4. Sprinkle the sliced almonds, 2 tbsp. sugar and some butter flakes on the top.
  5. Bake one hour at 350 degrees (F).
