Lentils and Rice (Megadarra)

Edit to add or update your photo! This popular dish is also made with cracked wheat in place of rice. It is very filling and makes a great entree or side dish.

Ingredients

1 cup brown lentils
1 cup basmati rice
2 medium onions, sliced thin
4 tbl. olive oil
2.5 - 3 cups water
1 tsp. cumin
1/2 tsp. allspice
2 garlic cloves, crushed
salt and pepper to taste (I like at least a tsp of salt)

Directions

  1. In a saute pan, gently cook the lentils in 2 tbl. olive oil
  2. Add water and bring to a boil, then reduce heat and simmer for 15 minutes
  3. Mix in rice, cumin and allspice, return to boil then reduce heat and simmer for 20 minutes
  4. When water has been absorbed, add salt and pepper to taste
  5. While lentils and rice are simmering, saute the onions in the remaining olive oil. The onions should be sauteed until they are a deep golden brown.
  6. Add garlic and saute for a few minutes more
  7. Add onions to rice and lentils, reserving some to put on top

Very nice and aromatic. Doubled the spices and added a little crusher red chilies. Yum!! The proportions of rice/lentils to water seemed off. Had to add 1 additional cup in order to cook the rice.
