
Zucchini Potato Latkes

This Romanian influenced recipe adds some variety to the traditional latke recipe.

Ingredients
2 lbs. zucchini
2 large potatoes
1 medium onion
3 eggs
1 tsp. vegetable oil
3/4 cup matza meal
salt and pepper
vegetable oil for frying
Directions
- Peel and grate zucchini (discard seeds).
- Peel and grate potatoes and add to the zucchini.
- Make sure that you remove any water from both the zucchini and the potatoes, otherwise they will not brown well.
- Grate the onion and add to the zucchini mixture.
- Add eggs, oil and 1/2 cup matza meal and mix. You may need to add more matza meal until the mixture holds together.
- Add salt and pepper to taste.
- Spoon mixture into a large skillet and fry in vegetable oil until browned on both sides.
- Place latkes on paper towel to drain excess oil and keep warm in oven until ready to serve.
- Total cook time depends on how many latkes you fry at one time.
