
Ginger Sweet Potato Latkes

This recipe makes a small batch of latkes -- multiply ingredients depending on how much you want. Each batch makes about 3-4 latkes, but that really depends on how large you make each one. A great serving idea is to mix these with your more traditional potato latkes to add variety.

Ingredients
1 large sweet potato, peeled and grated finely
1/2 inch piece of fresh ginger, peeled and grated finely
1 large egg
1 tbl. matza meal
1 pinch salt
vegetable oil for frying
Directions
- Mix sweet potato, ginger, egg matza meal and salt. You may need to adjust the amount of matza meal to end up with a mixture that holds together well.
- Fry in skillet until both sides are golden brown
- Place on paper towel to drain off excess oil.
- Keep warm in oven until ready to serve.
