
Lemony Chicken with Olives and Tomatoes

I found this recipe on the internet and decided to give it a try. It was a big hit with my family and we decided to add it to our regular repertoire. The lemony marinade gives it a great taste. I didn't change much from the recipe as I found it except to increase some of the spices. Other changes are noted. Add a comment if you know the origins of this recipe.

Ingredients
1 whole cut-up chicken
3 tbl flour (I use whole grain flour)
4 tomatoes, chopped (1 can works fine)
10-15 green olives (or others of your choice, add more or less to taste)
6 lemon wedges
3 tbl olive oil
1 cup chicken stock
Marinade
1 tbl cumin
2 tsp paprika
1 tsp ginger
1 tsp turmeric
5 garlic cloves, chopped
2 tsp ground coriander (or use fresh chopped coriander)
Juice of two lemons (fresh or bottled)
1/2 tsp Black pepper (adjust to taste)
Pinch of cayenne (adjust to taste)
Directions
- Place chicken in a baking dish and marinade for 30 minutes.
- Add flour to the chicken and mix to coat well.
- Mix tomatoes, olive oil, chicken stock and add around the chicken.
- Place olives and lemon wedges all around the chicken. I like to sprinkle some olive oil directly on the chicken as well.
- Bake uncovered for 1 hour at 350 degrees.
