Passover Walnut Cake (Tishpishti)

This recipe, a tradition from Sephardic Turkey, is best made ahead of time to allow the syrup time to infuse the cake.

Ingredients
For the cake:
5 eggs, lightly beaten
l-l/4 cups walnuts, chopped
3/4 cup ground almonds
l cup sugar
Juice pf one orange
Grated zest of one orange
2 tsp cinnamon
For the syrup:
2 l/4 cups sugar
2 cups water
l tbsp lemon juice
Directions
- Prepare the syrup by boiling the sugar and water with the lemon juice for 15 minutes. Set aside to cool then refrigerate.
- Mix all the cake ingredients thoroughly.
- Line a l3x9 inch cake pan with greaseproof paper and brush with oil. Be sure to brush the bottom and sides.
- Combine the cake ingredients and pour into cake pan.
- Bake for 1 hour at 350 degrees, until browned.
- Immediately turn out the cake (upside down) into a serving dish and remove paper.
- Cut into 2 inch squares and pour syrup over cake.
- Set aside for 30 minutes, then turn squares over.
You are right, the scarf is hand-spun polworth. The cd has one of my all time favorite song newly discovered songs (it’s the Garden so;.g)I’nm glad it felt like Christmas. You deserve it.
