Fluden- Fruit and Nut Filled Pastry

Fluden, Fladen, Fleddel etc, this is a layered cookie /pie pastry filled with nuts, jam, honey, fruit such as apples, poppyseeds etc. The word derived from the German means "flat". There is just as many recipe variations as there is for potato salad! This recipe has 2 layers of dough and I have made some with 4 to 6 layers too. This basic recipe will get you started on Fluden baking! Treat this dough as you would for pie pastry making!

Ingredients

Dough:
3 cups flour
2 tsp baking powder
dash salt
3 eggs fork beaten
2 Tbs oil
3/4 tsp lemon rind grated
1 Tbs orange rind grated
1 Tbs lemon juice
Filling;
1 1/2 cup thick jam or preserves ( ex: orange, cherry, apricot,pineapple, berry etc )
1 1/2 cup raisins
1 1/2 cup walnuts coarsely chopped
Topping:
1 Tbs sugar
1 tsp cinnamon

Directions

  1. This make 3 Fludens:
  2. Combine flour, baking powder, salt and sugar.
  3. Add beaten eggs, oil, lemon juice, lemon rind, orange rind and mix well with a spoon.
  4. If dough gets to hard to mix, use your hands and form or shape dough into a ball.
  5. Wrap dough in plastic and chill several hours.
  6. Cut chilled dough into 6 equal parts.
  7. Each fluden will use 2 balls of dough.
  8. Roll out one piece on a lightly floured surface to fit an 8 inch square pan with overlapping dough over the sides( one can trim as in pie making )
  9. Spread dough with 1/2 cup jam, then 1/2 cup raisins and then 1/2 nuts.
  10. Roll out another piece of dough to make the top crust, also overlapping the sides a bit.
  11. Moisten edges of dough with water and press with a fork to seal all dough edges. Prick top crust with fork.
  12. Chill while you prepare the other two fluden.
  13. Then sprinkle each fluden with cinnamon and sugar.
  14. Bake in a 350F oven until golden, about 30 minutes
  15. Cool to warm and cut or serve at room temperature
