Best Passover Brownies

This came off the box of Yehuda Cake Meal. It's one of the best brownies of its kind. My Tips : Chilling makes these brownies have a more fudgy texture. Dutched cocoa makes them even more dark in color

Ingredients

5 eggs
2 1/2 cups sugar
1 1 /4 cups oil
3/4 cup baking cocoa
1 1/4 cups cake meal
1 1/4 cup walnuts chopped

Directions

  1. Preheat oven to 350F
  2. With mixer beat eggs and sugar very well
  3. Add oil, cocoa, cake meal and beat well
  4. Stir in nuts
  5. Lightly grease 2, 9 inch square pans or one 8 x 12 pan
  6. Pour batter into pans.
  7. Bake for about 40 minutes or until brownies appear set. careful not to overbake these.
  8. Remove to rack to cool completely
  9. Cover and chill well before cutting

It's difficult to find GF recipes for yehuda cake meal because it is inherently not a GF product (being extra fine matzah meal). For a GF cake meal, there is not a commecially available prepackaged product. However, the gluten free matzos can be ground down into cake meal so long as you have a food processor that has been kashered for passover. Just let it run longer to get it extra fine.

So much oil, yuck. Consider halving this with applesauce for a more cake like and healthier outcome. It is difficult to find GF recipes for Yehuda Cake Meal.
