Passover Broccoli Knishes

These are really yummy and cauliflower may be substituted although broccoli adds a nicer color. A great way to use up leftover mashed potatoes!

Ingredients
1 cup prepared mashed potatoes
1/3 cup matzo meal
2 tablespoons potato starch
1/2 small white onion finely chopped
2 egg whites
1/2 teaspoon freshly ground black
pepper
1/4 teaspoon salt
dash nutmeg
1 cup fresh broccoli steamed and
finely chopped
Directions
- Preheat oven to 375.
- Combine potatoes, meal, starch, onion, egg whites, pepper and salt then knead together.
- Divide dough into 6 balls and flatten each and then divide broccoli evenly onto each circle.
- Fold over and press edges to seal.
- Generously coat a baking sheet with cooking spray.
- Arrange knishes in a single layer and place baking sheet
- Bake 15 minutes or browned on each side then serve hot.
