Sweet Couscous with Dates, Raisins and Almonds

Couscous prepared with sugar, cinnamon dried fruits and almonds for a sweet dessert. Goes well for festival holidays such as Hanukkah or Purim. If you don’t have a couscoussier, use a double boiler.

Ingredients

5 cups couscous
2 tbl. peanut oil
3 oz. water
1/2 tsp. salt
1 tbl. cinnamon
3/4 cup olive oil
2 tbl. confectioners’ sugar
1/4 cup dates
1/4 cup raisins
1/4 cup almonds, chopped

Directions

  1. Cover couscous with cold water and let stand for 15 minutes, then drain.
  2. Add peanut oil, 3 ounces water, salt and cinnamon. Mix well using your hands to break up clumps.
  3. Place the couscous in the top of a couscoussier with boiling water and steam for 30 minutes.
  4. Return couscous to a bowl and mix in olive oil then return to the couscoussier and steam for another 30 minutes.
  5. Serve the couscous hot, arranged in a cone shape on a large serving platter. Sprinkle with confectioners; sugar, dates, raisins and almonds.
