Lentil Soup

Prep time is short for this soup recipe but the cook time varies with the kind of lentil you use - some soften more quickly than others. Red lentils seem to soften the quickest, while brown seem to need a few extra minutes.

Ingredients
2 cups lentils, washed
1 large onion, chopped
1/2 cup flour
1/2 cup olive oil
1/2 tsp. cumin
1/2 tsp. white pepper
4 cups water
1 tsp. salt
Directions
- Boil lentils with 4 cups water for 20 minutes.
- Mix onion, flour, spices and oil then add to lentils.
- Cook until lentils are tender.
This is an easy recipe to follow and I was very satisfied with the taste!
