
Ful Mudammas

Popular dish in Egypt for breakfast, Ful (pronounced "fool") Mudammas (or Medames) has an ancient history, and originally used a cooking method mentioned in the Talmud (burying fava beans in sealed pot of water over coals - see Wikipedia for additional details). This dish is also popular in Sudan, Syria and Israel.

Ingredients
1 can fava beans
1/2 green jalapeno pepper
2 colves garlic
1/4 tsp. salt
juice of two lemons
Directions
- Boil the beans on low for 15 minute.
- Chop the garlic and pepper fine then mix with the salt and lemon juice.
- Add to the fava beans and mix.
- Serve with olive oil and parsley on top.
