Hanukkah Burmuelos (Zalabiya)

These doughnuts or fritters are a nice alternative to the Hanukkah sufganyot (or jelly doughnuts).

Ingredients

6 cups flour
2 pkgs. active dry yeast
3 cups warm water
2 tbs. sugar
1 tsp salt
2 tbs vegetable oil
oil for frying

Directions

  1. Combine yeast, 1 cup warm water and sugar and let stand 10 minutes.
  2. Mix salt, oil, 2 cups water and yeast mixture in a large bowl.
  3. Gradually add 6 cups of flour and mix well to make a smooth, sticky dough.
  4. Cover bowl and let rise in a warm place for an hour.
  5. In a deep saucepan, heat oil to 375 degrees (F) (use candy/deep fry thermometer).
  6. Make two-inch dough balls and poke a hole in the center with your finger. Make sure your hands are moist to keep dough from sticking.
  7. Fry in hot oil until golden brown on all sides. Remove and drain on paper towels to remove excess oil
  8. Sprinkle with confectioner’s sugar or serve with warm honey.
