Halvah is a wonderful treat that is unlike most desserts.

Ingredients
1 3/4 cup sesame paste (tahini)
2 cups sugar
1 cup water
1 tbs. pure vanilla
2 egg whites
1 cup shelled pistachios, unsalted
Directions
- Combine sugar and water in saucepan and bring to a boil. Syrup is done when a few drops in a small basin of cold water forms a firm ball that will not flatten on removal (occurs at 234 degrees (F)). Set aside.
- Place sesame paste (with oil) and vanilla in blender and mix thoroughly.
- Beat egg whites until stiff and fold into sesame paste.
- Gradually add 3/4 cup of the syrup, stirring constantly
- When completely blended fold in nuts and remaining syrup.
- Transfer mixture to a loaf pan.
- Smooth over top, cover tightly and refrigerate for 3 days.

Finally, A Halva recipe!! I grew up in Ukraine and never dreamt of making own halva! I will try it now.
