hese fried rice fritters are a favorite among Italian Jews. Arborio is a good Italian rice for this dish but you can use any good short or medium grain rice.

Ingredients
1 cup rice
21/2 cups water
1 tsp. salt
1 cup dark seedless raisins
1/2 cup pine nuts
2 tsp. freshly grated lemon zest
6 eggs, lightly beaten
1 cup olive oil
Granulated sugar and cinnamon
Directions
- Add rice to pot of salted water and bring to a boil.
- Lower the heat and simmer, covered, for 30 minutes without stirring. Rice should be well done and dry.
- Remove from heat and add raisins, nuts and lemon zest.
- Set aside to cool for at least 30 minutes.
- Add eggs to rice mixture and mix well.
- Make about 6 round rice balls using about a rounded tablespoon of the mixture for each.
- Fry 3 rice balls in ½ cup heated oil, until golden brown on all sides. To maintain the best color, replace oil for second batch.
- Place on paper towels to absorb oil.
- Serve warm, either plain or rolled in cinnamon and sugar.
