Fried Eggplant

Edit to add or update your photo! This is a very simple and common side dish that goes well with meat, fish or chicken. The eggplant slices are also great in sandwiches. You can vary some of the ingredients and seasoning to your taste -- I prefer a simple preparation.

Ingredients

1 large eggplant (I mean large), sliced thin
1/2 cup of whole grain wheat flour (alternately, use bread crumbs or matza meal)
1 egg
1/2 cup vegetable oil
Salt and pepper

Directions

  1. Lightly beat the egg and place in a shallow bowl
  2. Dip the eggplant slices in egg and lightly dust with flour
  3. Fry the coated slices in the vegetable oil until lightly brown -- turning once
  4. Place the eggplant on paper towel to draw out excess oil
  5. Add salt and pepper to taste.

I lightly sprinkle my eggplant slices with Kosher salt, stack them and weight them, to get rid of the excess moisture, before dipping and coating them. Also note that if you fry them in very hot oil (just below the smoke point), and only a few at a time
