Hummus

Popular chick-pea dip popular throughout the Middle East. Today it is extremely popular in Israel and the US as well. The recipe is deceptively simple – it may take a few tries to get the mix just right. There are several tehina recipes on JRT. Goes well with pita bread, though at home we often ate it with fresh French bread.

Ingredients

2 cups canned chick-peas, drained
Juice of 2 lemons
1 tsp. salt
1/4 tsp. cumin
3 tbs. pure tehina paste or 1 cup tehina
2 garlic cloves, mashed
2-3 tbs. oil
Paprika or chopped parsley (for garnish)

Directions

  1. Place all the ingredients in a food processor or blender, mix until chick-peas are smooth.
  2. Refrigerate hummus in a covered container.
  3. Serve sprinkled with olive oil and either paprika or parsley.
  4. If desired, reserve 1/4 cup whole chick-peas and sprinkle on top.

adding the oil slowly will make it creamier (like when you make mayonnaise. I add more tehina about 250-300 g (8 to 10 oz.) breadmantalking.blogspot.com

I was taught to add the olive oil very slowly while the chickpeas and other ingredients are being blended in the food processor.
