
Tehina

Tehina is a thick dip made from sesame seeds. It is often used as a topping for falafel and other dishes, but at home we used it as a dip with fresh French bread. My mother would leave me instructions in the morning to make tehina for dinner that night and I enjoyed slowly adding water and stirring.

Ingredients
1 cup pure tehina paste
2 garlic cloves, crushed
1/2 cup water
dash of hot pepper (red)
1 tsp. salt
1/2 bunch chopped parsley
juice from 2 lemons
3 tbs. olive oil
Directions
- Mix tehina paste, garlic, water, pepper, salt and lemon juice until you get smooth paste. Add water if tehina is too thick.
- Sprinkle with parsley or mix the parsley with the dip.
- Serve as a thin layer on a small plate, with a drop or two of olive oil.
