Tehina

Tehina is a thick dip made from sesame seeds. It is often used as a topping for falafel and other dishes, but at home we used it as a dip with fresh French bread. My mother would leave me instructions in the morning to make tehina for dinner that night and I enjoyed slowly adding water and stirring.

Ingredients

1 cup pure tehina paste
2 garlic cloves, crushed
1/2 cup water
dash of hot pepper (red)
1 tsp. salt
1/2 bunch chopped parsley
juice from 2 lemons
3 tbs. olive oil

Directions

  1. Mix tehina paste, garlic, water, pepper, salt and lemon juice until you get smooth paste. Add water if tehina is too thick.
  2. Sprinkle with parsley or mix the parsley with the dip.
  3. Serve as a thin layer on a small plate, with a drop or two of olive oil.
